A vegetable oil is a triglyceride extracted from a plant. Oils extracted from plants have been used since ancient times and almost in many cultures. The term "vegetable oil" can be narrowly defined as referring only to plant oils that are liquid at room temperature, or broadly defined without regard to a substance's state of matter at a given temperature. What does expeller pressed vegetable oil means?

An expeller works by squeezing the oil out of the seed under pressure. The aim is to remove as much oil from the seed as possible without compromising the quality of the oil. When you see this term it means you are looking at an oil produced without the use of chemicals such as solvents. These expeller-pressed oils are extracted by exposing the food to extreme pressure.  Mechanical extraction is how things were done for centuries. Applying heavy pressure to olives or seeds until oil starts seeping out. An expeller is a big screw that is tightened until it crushes the nut/seed and causes the oil to run. This method provides yields of only 65-70% of the oil. Many companies then try to extract the rest of the oil using the chemical solvent. Mechanical pressing may create high temperatures, especially when squeezing hard nuts. This usually happens when working with automatic machinery in high volume. The issue with high temperatures, as we mentioned before, is that they change the flavor of the oil.

What does cold-pressed vegetable oil means?

Cold-pressed oils are obtained by first grinding nuts, seeds, fruits or vegetables (depending on the oil being made) into a paste. Then an oil stone or other tool is used to press the paste which forces the oil to separate out. Although pressing and grinding produces heat through friction, the temperature must not rise above 120°F (49°C) for any oil to be considered cold pressed. Cold pressed oils are produced at even lower temperatures. Cold pressed oils retain all of their flavor, aroma, and nutritional value. Olive, peanut and sunflower are among the oils that are obtained through cold pressing.
